Apple and speculoos cake

  • 1.5 apples
  • 50g speculoos
  • 1.5 eggs
  • 50g sugar
  • 50g flour
  • 1/2 sachet of yeast
  • 20cl heavy cream

Recipe

Step 1

Preheat oven to 180°C.

Step 2

Peel, core and slice apples.

Step 3

Whisk the eggs with the sugar until the mixture whitens.

Step 4

Add the crème fraîche. Mix well.

Step 5

Stir in flour, baking powder and speculoos crumbs. Mix until smooth. Mix gently.

Step 6

Pour the mixture into a mould.

Step 7

Add apple wedges before baking, and crumble in a few speculoos.

Step 8

Bake for 35 to 45 minutes. Check with the tip of a knife.
