  • 1 bunch old-fashioned carrots
  • 1 pumpkin
  • 1 red onion
  • 6 figs
  • fresh goat's cheese
  • olive oil
  • 1 teaspoon balsamic vinegar
  • 2spoonhoney soup
  • 1 teaspoon mustard

    Step 1

    Preheat oven to 180°C

    Step 2

    Peel and slice carrots and pumpkin, brush with oil and bake for 20 min.

    Step 3

    Meanwhile, make the honey vinaigrette by mixing all the ingredients together.

    Step 4

    Place the roasted vegetables on a plate, quarter the figs and red onion and add the fresh goat's cheese. Add the vinaigrette. Toss to combine!
